It doesn’t look like anything fancy, but look closer and you’ll see a salad that my husband and I are going CRAZY over right now!

A little sweet, a little salty, and a LOT of delicious superfoods made this salad one that we made three times this week… so I had to share it with you!

Sweet Pumpkin Seed Salad

Ingredients:

  • 2 Hearts Romaine
  • 1/4 Cup Salty Pumpkin Seeds (we used a non-MSG version we found at Costco 😉
  • 2 Carrots, diced
  • 1 Cup Shredded Raddichio
  • 3 Tbsp EVOO
  • 1 Tbsp Balsamic Vinegar
  • 1 Cup Roasted Chicken – white or dark meat (we roast a free-range chicken every week and use leftovers for salads.  I highly recommend!)

Directions:  

  1. Mix together oil and vinegar with salt and pepper to taste
  2. Toss together all salad ingredients in the dressing

Alter saltiness by adding more pumpkin seeds – which gives it tons of crunch!
