Detoxifying Vegan Coleslaw
- 2/3 Lb. Shredded Red or Green Cabbage
- 1/3 Lb. Shredded carrots
- 1/2 Cup Red Pepper, sliced thinly
- 1/3 Cup Tahini
- 1/3 Cup Maple Syrup – grade B is best
- 1/3 Cup Apple Cider Vinegar
- 1/3 Cup Organic Hemp Seeds (add more if you love them like I do!)
- 1/ Red Onion, chopped
- 2 medium tomatoes, chopped
- 1/2 Cup green apple, diced
- 1 Tsp. Cracked Black Pepper
- 1/2 Tsp Cayenne Pepper
- 1/4 Cup Pepitas
- Toast Pepitas in pan
- Add pepitas to tossed remaining ingredients and salt to taste
- Allow to refrigerate for at least one hour before serving.
